Hi everyone!!! I thought it might be helpful to have folks chime in with food prep and general food ideas. I like to Cook at least 1 or 2 big batch items on Sunday so I have things readily available. I live in Minnesota, so winter is a time that soups are a comforting and warm go-to option. What do you like to prep? What are you eating this week? Below are some of mine!!
Sunday: cook big batch of rice in the instant pot, followed by chicken, then maybe roast some beets and sweet potatoes
Meals: chili, chicken or turkey & veggie soups, deconstructed egg rolls (it's like a big bowl of the guts), stir fry, chipotle style bowls (more veggies & protein).
