Good question Kate and Suzanne, These are all really good. I always have hard boiled eggs in my refrigerator, too. Some new ones for me...
* Soups (veggie, bone broth, lentil, any that don't have dairy). They are so satisfying and I prefer warm food almost always. Plus easy to heat up and voila.
* Taco Tuesday but without the tortillas, cheese, higher fat stuff. I put lots of shredded chicken seasoned with salt, pepper, lemons on top of shredded lettuce, jalepenos, tomatoes and a little avocado. While my daughters, do the same (but in tortillas and topped with cheese).
* Spaghetti squash with tomato sauce. It's like pasta but not. And I usually add spinach and if I need just a tiny dairy, sprinkle of goat cheese. Also easy if you get the pre cut in spirals squash.
